Spicy Pumpkin Spread

Great on an English muffin or toast!  Tastes just like Pumpkin Pie!  
You can half this recipe.

Makes 48 tablespoons (3 cups)

Ingredients

1 1/4 cup apple juice (cold)
1 pkg vanilla pudding mix (instant)
1 cup pumpkin (canned) - [not the mix]
3/4 tsp pumpkin pie spice (1/2 to 1 tsp)

In a mixing bowl, combine apple juice, pumpkin and dry pudding mix. Beat
on low speed for 2 minutes. Stir in Pumpkin Pie spice. Let stand for
5 minutes. Serve on toast or English Muffin. Store in refrigerator up to 3 days.
