Beet Cabbage Soup
Superswift soup!
Makes 6 Servings
Ingredients
2 (1-lb) jars sliced pickled beets
with onions, finely chopped, undrained
3 1/2 cups reduced-sodium beef broth
2 cups each shredded red cabbage, diced potato
1 small bay leaf
In covered Dutch oven, simmer ingredients 45 minutes. Discard bay leaf.
