Eggnog Cherry Macadamia Nut Loaf

Thank you Carol! Carol says, "I came up with this recipe today converting it
from a high sugar, high fat recipe. It turned out great and the only sugar in it is
in the cherries. It makes a nice cake for the holidays."

Makes 16 servings

Ingredients

2 1/2 cups all-purpose flour
3/4 cup Splenda
1 tablespoon baking powder -- + 1 tsp salt
1 1/2 teaspoons vanilla
1 large egg -- beaten
1 1/4 cups Healthy Exchanges Eggnog -- recipe below & under Beverages - Eggnog
1/3 cup canola oil
1/2 cup chopped macadamia nuts
1/2 cup maraschino cherries -- chopped

Preheat oven to 350*F. Spray 1 loaf pan {9"} or could be baked in a bundt pan for
a fancier slice. In a large mixing bowl, stir together the flour, baking powder,
salt and Splenda. In a smaller bowl, beat together the egg, eggnog, vanilla and oil;
stir into dry ingredients, mixing well. Fold in the chopped nuts and cherries. Spoon
batter evenly into the prepared pan. Bake for 45-50 minutes or until a toothpick
inserted near center comes out clean. Cool for 10 minutes on wire rack; remove from
pan and continue cooling on rack.

SERVING SIZE: 1 slice (Hint: slice 8 thick slices and then cut those in half to
get a nice sized piece instead of a thin slice.)

Eggnog

Makes 4 servings

Ingredients

4 cups skim milk
1 package Jell-O sugar-free instant vanilla pudding mix -- (4 serving size)
1/2 teaspoon rum extract
1/4 teaspoon ground nutmeg

In a large pitcher, combine skim milk, dry pudding mix, rum extract, and nutmeg.
Mix well using a long spoon. Refrigerate 5 minutes. Gently stir again. Serve at once.
